Mutton curry is an Indian favorite dish that is prepared from goat meat .Although very popular in west bengal ,mainly in bengal religion ,the dish is found in different names across all india .Authentic bengali kosha mangsho or spicy goat meat curry. Kosha mangsho or mutton kosha is a traditional bengali delicacy. Kosha mangsho is a famous bengali mutton curry popular for its rich and taste and spiciness .Mutton curry also refereed to as kosha mangsho ,lamb curry ,or goat curry .Is generally served with rice or roti,naan,or parotta the dish also served with polao or biriyani.
What is mutton curry?
It is a very popular traditional dish in a bengal and translated into a kosha mangsho . This dish made in a iron kadai which gives it a dark golden colour .The thick gravy made the strong flavours of mutton at every bengalis.Its serve it bengali special basanti polao or plain rice and also serve luchi or porota.
INGREDIENTS
Common ingredients used to prepare mutton kosha include ;
1- Mutton
2-Salt ,
3-Turmeric powder,
4- Mustard oil ,
5-Ginger garlic paste
6-Onion paste ,
7-Chopped onion ,
9-Chili ,
10-Tomato,
11- Coriander leaves,
12-And also added black cardamom,
13-Garam masala powder.

Mutton is first marinated for a few hours with mustard oil and turmeric powder ginger garlic paste to make it tender or soft . It put all the flavours of the ginger garlic and mustard oil .
If you wish , you can added 2 tsp of curd while marinating the meat .
As is common with bengali type cooking .we are using mustard oil in this dish ,fo the marinate as well as for the flavorful gravy .
However , this dish is traditionally made in a iron kadai and is cooked for hours until the mutton becomes tender and the masala becomes dark brown in color .
Lets it start off, some mustard oil is heated in a iron kadai and some of the add garam masala like black cardamom ,green cinnamon and cloves are added.
Then lightly stired in oil then added a pinch of sugar .
Next added chopped onion , garlic ginger paste and tomato slices are allowed to cook with the spicy color ,then added mutton pieces are allowed to fry for a few minutes .
Before addition of water ,some of the other spice powders like coriander powder , turmeric powder ,red chili powder and cumin powder .Then string it all the whole things until the dark golden color .
It is cover to cook for a while after which some garam masala is put in .
Then served it some fresh coriander leaves .
Potatoes are a must add in this curry ,benagli style mutton kosha is incomplete with out a big slices potato .

Luchi / polao kosha mangsho is match bengali made in heaven .
You can also serve this spicy mutton curry with roti or porota ,plain rice .
